IT'S GOOD TO BE BACK...
Well we're excited that things are slowly returning to normal and with restrictions easing it's good to be back working with hospitality and retail venues again.
It has been a tough few months, with sales down about 50 percent since the start of Covid. Whilst we haven't had the same situation as the hospitality industry, almost half of our business is
supplying to these industries, so basically half of the business was gone almost overnight. We're lucky though that we could still operate in some capacity with the bottle-shop trade
We also had to get creative and work out how we could support both ourselves and the community during this time and turned our skills to making ethanol to be used in hand sanitiser.
We're excited to be moving forward and are now focusing on the future. We have recently welcomed Freddie to the team as our new General Manager, have started building up inventory again, our labels are getting a facelift and we've been tasting new rums and whisky's that we put down a year ago.
Thanks for all your support over the last couple of months, looking forward to getting back into it.
The Canberra Distillery
Frederique (Freddie) comes to the distillery with a wealth of experience in the hospitality industry.
A qualified sommelier, originally from France - Freddie says good food, wine and spirits have always been part of her life. Her love of travel and experiencing new cultures, languages and
flavours is what originally brought her to Australia.
She is excited to work with Tim and a team who are also passionate about using local producers and ingredients that have a story behind them.
Her favourite gin is the Blood Orange paired with a ginger and lemon kombucha. Refreshing & light!
Fun fact: After a few gins she loves to dance and is not afraid to bust a move on the table top.

Let's drink to the festive occasion with one of Freddie's cocktail creations.
Oh Snap! Winter Gin Cocktail 🍸
50ml Winter Gin
30ml Lemon Juice
40ml Pea Puree (see below ingredients)
To make the pea puree (40ml):
Make the pea puree – Gently simmer water with sugar and add peas. When soft remove from heat and blend. Strain twice through sieve.
Pour winter gin, lemon juice and pea puree over ice into a cocktail shaker.
Shaker like you meant it and pour.
THE ULTIMATE WINTER WARMER
The idea arose from a casual conversation at the Night Markets in Kingston, May 2016. It was the first cold night of the year and it was hard to sell a Gin and Tonic that was designed for a hot summers day. The market’s manager, Stacey, introduced me (Tim) to Andrew from BurraBee Farm and urged me to use his produce to make a winter warming Gin. Three weeks later we were again standing in the cold at the same market drinking this warming Basil Gin Liqueur.
Flavour Profile: It is only lightly spiced, sweet and aromatic.
Best Served: This Gin is best enjoyed straight. Warm the glass by sitting it in hot water before consuming.
